Try The Veggie Medley Soup This Harmattan – Garden Vegetable Soup

Here is to the vegetable and soup lovers. Besides being straightforwardly made under 30minutes with less than 50 calories per serving, it is undeniably suitable for the Harmattan (dry weather).

WHAT YOU NEED

23 cup sliced carrot

12 cup diced onion

2 cloves garlic, minced

3 cups fat free broth (beef, chicken or vegetable)

1 12 cups diced green cabbage

12 cup green beans

1 tablespoon tomato paste

12 teaspoon dried basil

14 teaspoon dried oregano

14 teaspoon salt

12 cup diced zucchini

 

HOW TO:

Spray a large saucepan with non-stick cooking spray.

Stir fry the carrot, onion and garlic over low heat until softened, about 5 minutes.

Add broth, cabbage, green beans, tomato paste and simmer, covered about 15 minutes or until beans are tender.

Stir in zucchini and heat 3-4 minutes.

Serve readily.
